Easter Rice Krispie Treats

If you’re looking for a cute and easy Easter snack or treat, these Easter Rice Krispie Treats are perfect for you! The delicious crispy and chewy rice cereal and marshmallow mixture is pressed into muffin pans to make cute little nests, and topped with sprinkles and mini eggs.

I was going to pitch these as a cute little Easter snack idea for kids, but I’m thirty-mumble-mumble years old and I have to say I’m probably as excited about these as a child would be, so I guess it turns out they’re actually for everyone 🎉
With stretchy marshmallows and crunchy cereal, plus the lovely little pastel mini Easter eggs, there’s a lot to like about them.

But one of the things I love most is that this Easter Rice Krispie Treat recipe is really, really easy to make.

Ingredients

- Puffed rice cereal – You can use Kellogg’s Rice Krispies, or any similar cereal of your choice. If you need your Easter rice krispie treats to be gluten free, make sure you choose a gluten-free cereal, as regular Rice Krispies contain gluten. See my gluten free rice krispie treats post for tips on what to look for.
- Marshmallows – I usually use regular-sized marshmallows, and also toss in some mini marshmallows with the rice krispies, so they stay whole and make little marshmallow pockets. You can use all mini marshmallows, or if you can only get large marshmallows, chop them into smaller pieces using oiled scissors so they melt faster. I found cute multicoloured mini marshmallows in very Easter-y colours and used those as my mix-ins, but any colour will work here. If making these gluten free, make sure you check that the marshmallows are gluten free, as some are not.
- Butter – I prefer to use unsalted and then add a pinch of salt, but you can use salted butter and omit the salt, if you prefer.
- Vanilla extract – Marshmallows already tend to be vanilla-flavoured, but I do like to add a splash of a good quality vanilla extract. You could also use another flavoured extract if you want.
- Mini Easter eggs – you can top your Easter rice krispie treats with any kind of mini chocolate eggs that you like. I used mini pastel candy-coated eggs that have a jelly-candy centre as well as chocolate, but good ol’ Cadbury mini eggs, or regular little chocolate eggs will all work here.
How to Make Easter Rice Krispie Treats

Start by melting the butter in a large saucepan, then add the vanilla extract and marshmallows, a stir over medium heat until the marshmallows are mostly melted. Remove from the heat and stir until fully melted.

Then stir in the rice cereal in two additions, mixing until well combined. Stir in the mini marshmallows until well distributed.

Spoon the mixture into lightly greased muffin pan holes. The mixture is sticky and will get stickier as it cools, so work as quickly as you can.

Make an indent in the top of each nest. I used a lightly greased measuring spoon, but you can also use your fingers.

Top with sprinkles, then pop some mini eggs into each nest. Leave for half an hour or so to set.

Extra Tips
- If the rice krispie mixture is setting too quickly and it’s hard to scrape the rest out of the pan, just put the pan back over very low heat on the stove, and stir until the mixture warms up and comes away from the side of the pan.
- To make Easter Rice Krispie Treats Bars instead of nests, gently press the mixture into a 9×9″ square cake pan (or any roughly equivalent-sized pan) that has been lined with non-stick baking paper. Decorate the top with the mini eggs and sprinkles, then leave to set before cutting into bars.

I also found these little chicken marshmallows at a local store and couldn’t help but pop them on top. Do you need them? Probably not. But are they cute and a little weird-looking (my favourite)? I think so.

Easter Rice Krispie Treats
Ingredients
- 85 g unsalted butter cubed
- 1 teaspoon vanilla extract
- pinch salt
- 225 g marshmallows mini or regular
- 175 g rice krispie cereal
- 60 g mini marshmallows or chopped-up regular marshmallows
- 36 mini Easter eggs
- sprinkles to decorate
- oil spray to grease the pan
Instructions
- Lightly grease a 12-hole standard muffin pan with oil spray (or you could use a little bit of extra melted butter).
- Melt the butter in a large saucepan, over medium heat. Add in the salt, vanilla and the marshmallows and keep stirring until the marshmallows are almost melted. Remove from the heat and keep stirring until fully melted.
- Add in the rice krispie cereal in two additions, stirring to combine well. Add in the mini marshmallows, and stir just until distributed.
- Using two oiled spoons, or an oiled cookie scoop, divide the the mixture between the muffin pan holes. Work quickly, as the mixture will start to set and get stickier. If it sets too much in the saucepan while you're working, pop it back on the stove over very low heat and stir until it softens.Note: You may have a little bit too much mixture for the 12 muffin holes – if so, you can put it into another muffin tray if you have one, or just spoon it onto a piece of non-stick baking paper to set.
- Use the back of an oiled spoon, or your fingers, to gently press an indent into the top of the mixture to create a nest shape.
- Sprinkle over the sprinkles, and then top them with 2-3 mini eggs.
- Leave for half an hour or so until set, then lift the nests out of the pan.
- Store the rice krsipie treats in an airtight container at room temperature. They're at their best the day they're made, but they will keep for several days.
