Rice Krispie Treats for Easter!

If you’re looking for a cute and easy Easter snack or treat, these Easter Rice Krispie Treats are perfect for you!

The delicious crispy and chewy rice cereal and marshmallow mixture is pressed into muffin pans to make cute little nests, and topped with sprinkles and mini eggs.

To make them, start by melting some unsalted butter in a large saucepan over medium heat on the stove.

Add in vanilla extract, a pinch of salt and the marshmallows, stirring until the marshmallows are mostly melted.

Remove from the heat and continue stirring until all of the marshmallows are completely melted and the mixture is smooth.

Stir in the rice krispie cereal in two additions, mixing well in between, and then add the mini marshmallows.

Spoon the mixture into lightly greased muffin pan holes. The mixture will be sticky and get stickier as it cools, so work as quickly as you can.

Use the back of a spoon or your fingers to make a small hole in the tops of the mixture, making a nest shape.

Add some sprinkles, and then pop 2-3 mini Easter eggs into the middle of each nest. Leave them to set.

Store the Easter nests in an airtight container at room temperature. They're at their best the day they're made but will keep for several days.
