Microwave Lemon Curd

Microwave lemon curd is the easiest and most stress-free homemade lemon curd recipe you’ll ever try. Smooth, thick lemon curd, perfect for filling, spreading and topping desserts.

To make the lemon curd, start by juicing and zesting the lemons, and straining the lemon juice through a fine sieve.

Combine the lemon juice and sugar in a microwave safe bowl, and microwave until the sugar has dissolved.

Add in the cubed unsalted butter, and stir until all of the butter is completely melted and combined.

Gradually whisk in the beaten eggs until well combined, add half the lemon zest, then microwave at 50% power in 1-minute bursts, until the curd begins to thicken.

Drop the microwave power to 30%, and continue to cook in 30-second intervals until the lemon curd is as thick as you like it.

Strain through a fine sieve to remove any pieces of cooked egg white and make sure the curd is super smooth.

Stir through the remaining lemon zest, then cover the surface of the lemon curd with plastic wrap, and allow to cool.
