Homemade Vanilla  Extract

Homemade vanilla extract is SO easy to make, and you only need two ingredients (with one optional extra that I think makes it even better...)

Vanilla extract is made by steeping vanilla beans in alcohol. The flavour is released into the alcohol, making a flavourful extract that is perfect for baking.

Some vanilla extract is made with just vodka, but I like to add rum to mine for the most amazing, rich flavour. Bourbon is also a great addition.

You will need 15-20 vanilla beans to make 1 litre of vanilla extract. Grade B (also known as "extract quality") beans are perfect for this, as they are usually slightly cheaper.

Start by splitting the vanilla beans in half lengthwise, using the point of a sharp knife. For more flavour, you can scrape out the seeds and add them to the bottle.

Pour rum into your bottle, approximately 1/4 of the way up. This is about 1 cup. You can use dark or golden rum in this recipe.

Add in your split vanilla beans, split end facing down (this makes them easier to remove once the bottle is empty).

Fill the bottle to the top with vodka. You can already see that vanilla flavour and colour starting to come out!

Clean any stray vanilla seeds from the top of the bottle, then close the lid and give it a really good shake. Label the bottle with the date you made it.

Store in a cool dark place (giving the bottle an occasional shake) for at least 3 months. 6-12 months is even better, if you can wait that long. It's worth it!

Use your homemade vanilla extract in all of your favourite recipes, or decant into pretty bottles and give it away as gifts.
