Easy Easter Egg Rocky Road

This irresistible Easter egg rocky road is a fun way to use up leftover Easter chocolates. With soft marshmallow and chunks of chocolate eggs, this simple no-bake recipe can be made in half an hour!

Start by chopping up your Easter eggs. You can use any kind of Easter chocolate that you have.

I used Cadbury mini eggs. mini chocolate eggs and marshmallow eggs. Mini Creme eggs would also be great in this.

Next, melt milk chocolate and/or dark chocolate in a large bowl. You can melt it  in the microwave or over a double boiler.

Add the marshmallows to the melted chocolate and stir to cool the chocolate down, then add the Easter eggs and mix until well combined.

Press the rocky road mixture into a non-stick baking paper lined square tin and add some sprinkles if you like. Leave to set at room temperature or in the fridge.

Cut the Easter egg rocky road into pieces and store in an airtight container. It will keep for at least a week - if you don't eat it all in one go!
