How to Make Sugar Cookies with Fondant

Sugar cookies with fondant icing are the perfect wedding favor or birthday take home gift and can be coloured and decorated to suit any theme.

You will need a rolling pin, cookie cutters, a couple of paintbrushes or pastry brushes and fondant smoothers. An offset spatula, modelling tools and a cornstarch duster are also handy.

You'll also need your sugar cookies, rolled fondant (sugarpaste) and gel food coloring to tint the fondant, if you wish.

Lightly dust your work surface with cornstarch. Knead a piece of fondant until smooth and pliable, then roll it out to around  2-3mm thick.

Make sure the fondant isn’t sticking to the work surface, then cut it out using the same-sized cookie cutter that you used to cut out the cookie.

Lightly brush the surface of the cookie with some sugar syrup or cooled boiled water. I like to use syrup as it doesn’t dry as quickly.

Position the fondant onto the top of the cookie and gently smooth it down with your fingers, pressing out any air as you go.

Use a small flexible fondant smoother to gently buff the top of the fondant, smoothing out any lumps or bumps.

Let the fondant dry before adding decorations. These sprinkles were attached simply with some edible glue

Once the fondant is dry, the cookies can be stored in an airtight container or sealed cookie bags for 2-3 weeks.
