Strawberry Rice Krispie Treats

Treat yourself to the vibrant pop of freeze-dried strawberries in these Strawberry Rice Krispie Treats.

Made using just a handful of ingredients and a few simple steps, they have that irresistible combination of chewy marshmallow, crunchy rice cereal and fruity berry flavour in every bite.

To make them, start by crushing some freeze-dried strawberries. These are available in many supermarkets and online.

Next, melt the butter in a large saucepan. Add in the vanilla extract and stir well. If you're using unsalted butter, add in a pinch of salt as well.

Toss in the marshmallows and stir until melted. I used pink marshmallows, but if you only have white, you can add a few drops of pink food coloring if you like.

Stir in half of the crushed freeze dried strawberries and stir well. They may get a little clumpy but that's fine!

Add in half of the rice krispie cereal, and mix well, then add the remaining half and the remaining crushed strawberries and mix again.

Add in some mini marshmallows. Again, if you don't have pink marshmallows  then white will work just as well.

Press the mixture into a parchment paper lined 8" square cake pan. Sprinkle with extra freeze-dried strawberries if you like.

Leave to set, then cut into squares with a sharp, lightly oiled knife. These are best the day they're made, but will keep in an airtight container for 2-3 days.
