Easy Gluten Free Mince Pies

These delicious gluten free mince pies are made with an easy dough for melt-in-the-mouth cases, packed with flavour from homemade or store-bought fruit mince. The perfect gluten free Christmas treat!

These are the ingredients you'll need - gluten-free flour, xanthan gum (if the flour blend doesn't contain it), sugar, butter, lemon juice, egg, vanilla & fruit mince.

To make the dough, start by beating the butter and sugar until just combined and creamy, then add in the egg.

Add in the dry ingredients in 2-3 additions. Stir in the last addition by hand, as it may be too stiff for the mixer.

Gently knead the dough until it comes together, then pat it out into a disc on a piece of baking paper dusted with gluten free flour.

Roll the dough out to 3-4mm thick, dusting with a little more flour if it sticks to your rolling pin. Chill the rolled-out dough until firm.

Cut out circles of dough and place into each hole of a greased tart or muffin pan, gently pressing the dough with the pads of your fingers to avoid cracking.

Fill each pie with a heaped spoonful of fruit mince. I should fill the case almost to the top.

Roll out the remaining dough and cut stars to place on top of each pie. Brush the tops with a little beaten egg if you like.

Bake the pies until lightly golden on top and around the edges. The pies can be served warm or at room temperature, dusted with a little icing sugar if you like.
