Gluten Free Apple Muffins

These easy gluten free apple muffins are so simple to make, studded with sweet apple chunks and topped with a crunchy cinnamon streusel topping.

To make them, start by making a simple cinnamon streusel, mixing together gluten free flour, cinnamon, brown sugar and melted butter.

Prepare the wet ingredients by microwaving the milk and butter until the butter is mostly melted, then whisk in the egg, vanilla extract and plain thick yoghurt.

Whisk together the dry ingredients - gluten free flour, baking powder, cinnamon and brown sugar, breaking up and lumps of sugar as you mix.

Peel, core and chop the apples into small pieces. You can use any variety of fresh, juicy apple that you like for this recipe.

Mix the wet ingredients into the dry ingredients until *almost* mixed, then fold in the chopped apples until everything is just combined.

Line a muffin pan with paper cases or grease with butter, then spoon in the muffin batter and then sprinkle with the streusel topping.

Bake at 200°C (390°F) for 20 minutes, or until lightly golden and a skewer inserted into the middle of the muffins comes out clean.

You can serve these easy gluten free apple muffins drizzled with caramel sauce, if you like, and enjoy!
