Easy Baileys Chocolate Mousse

This Baileys mousse is made with three simple ingredients – chocolate, cream and a generous nip of Baileys Irish Cream.

To make the mousse, start by chopping some good quality milk chocolate and placing it into a heatproof bowl.

Then heat half of the cream in a saucepan or the microwave until it's just starting to bubble around the edges.

Pour the hot cream over the chocolate and allow it to sit for a couple of minutes for the chocolate to start to melt.

Give it a good whisk until the chocolate is completely melted and the mixture is smooth and well combined.

Whisk in the remaining cream, and then the Baileys Irish Cream liqueur. Chill the mixture until very cold.

Whip the mixture with an electric hand mixer until stiff peak *just* start to form. Be careful not to over-whip it or the mousse will become grainy.

Spoon the mixture into serving glasses. I decorated these with some Baileys ganache - you'll find the instructions for that in the link below.

Serve immediately for a softer mousse, or chill for a firmer, fluffier mousse. The mousse can be made in advance and stored in the refrigerator.
