Pink Panther {Raspberry Lemonade Ice Cream Float}

These Pink Panther drinks are a New Zealand childhood classic! Super easy to make, pink lemonade ice-cream floats.

When my best friend Katie was pregnant with her second baby, she told me one day that she really fancied a pink panther drink.

Back when we were kids it was pretty much the coolest drink you could get in a restaurant, sort of pink lemonade + something ice creamy + whipped cream on top and if you were at Valentine’s restaurant, they’d put a sparkler in it and light it as they brought it to the table.

Serious kiddy specialness there.

If you couldn’t guess from my vague description of the drink, I actually had no real idea of what actually went into them and in what amounts. When she first mentioned it to me I Googled it and the only recipes I could find were for various forms of alcoholic cocktail. But I sat down and had a think about it, and figured surely we could make something similar with pink lemonade and ice cream, making it like a pink lemonade spider or ice cream float.

The next time they came to visit, we decided to give it a try. Into a glass went a scoop of ice cream, a drizzle of raspberry cordial and a little lemonade. We mixed them up and topped up with more lemonade. Holy pink panther batman, it was pretty spot on!

The best thing is that these are so easy to make, and you only need three ingredients (four if you want to top them with whipped cream as I did for these pictures. And I love whipped cream, so I had to do it.)

HOW TO MAKE A PINK PANTHER DRINK

First, pop a scoop (or two) of vanilla ice cream into a tall glass, and pour over some raspberry cordial.

Add a splash of lemonade, and give it a good stir with a fork or long-handled spoon. I found the fork best for breaking up the ice cream and making a nice smooth, evenly pink drink.

Then just top it up with more lemonade. At this point, you can scoop off a little of the froth if you want. Nothing wrong with froth but if there is too much then you’re not left with much to actually drink. But if you’re into the froth, then go on and leave it.

Top with a spoonful (or three!) of lightly whipped cream.

So now that I know all of that, I can make pink panthers whenever I want. And that’s a little dangerous.

For the record, this Pink Panther is definitely more Peter Sellers’ Inspector Clouseau, not the terrible Steve Martin version. I would not share a Steve Martin-ly bad drink with you.

Ingredients

  • 2 large scoops vanilla ice cream
  • 2 tablespoons raspberry cordial
  • 1 can lemonade
  • whipped cream for the top optional

Instructions

  • Place one scoop of ice cream and 1 tablespoon of raspberry codial into each tall glass.
  • Add a splash of lemonade and stir with a fork or long handled spoon until the ice cream has broken up and the cordial is well combined.
  • Top up with lemonade. At this stage you can scoop off a little of the froth and top up with more lemonade.
  • Top the glasses with a spoonful of whipped cream if desired.

Notes

Depending on the size of your glasses, one 330ml can of lemonade will make 2-3 pink panther drinks.
Raspberry cordial varies in strength, so you may need to adjust it to your taste and how pink you want your drink to be. I use Schweppes raspberry cordial.
