with Cinnamon Streusel Topping

These easy gluten free apple muffins are super simple to make, studded with chunks of sweet apple and topped with a crunchy cinnamon streusel topping. 

Start by making the delicious simple cinnamon streusel topping. Mix together the gluten free flour, cinnamon, brown sugar and melted butter.

Prepare the wet ingredients by microwaving the milk and butter, whisk until the butter is melted, then whisk in the egg, vanilla extract and yoghurt.

Whisk together the dry ingredients - gluten free flour, baking powder, cinnamon and brown sugar, breaking up any lumps of sugar as you mix.

Peel, core and chop the apples into small pieces. You can use any variety of fresh, juicy apple that you like in this recipe.

Pour the wet ingredients into the dry ingredients and mix until *almost* combined, then stir in the chopped apples until everything is just combined.

Line a 12 hole standard-sized muffin pan with paper cases or grease with butter, then spoon in the muffin batter and sprinkle with the streusel topping.

Bake at 390°F (200°C) for 20 minutes, or until lightly golden on top and a skewer inserted into the middle of the muffins comes out clean.

These easy gluten free apple muffins are perfect as they are, but for an extra treat, you can drizzle them with caramel sauce, if you like.
